Baked White Fish

Baked White Fish
Serves 4-6
1 1/2 lbs. of any white fish (Julia loved sole so that would be a good choice)
1 teaspoon fresh lime juice 
1 teaspoon mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon white pepper
1/2 cup fresh bread crumbs 
1 1/2 teaspoon melted butter

1. Oil or butter a shallow baking dish large enough to accommodate the fish without them overlapping.
2. Mix lime juice with mayonnaise and spices. (Though it wasn’t part of Carol’s recipe, I would include the zest of a lime, too.)
3. Spread a thin layer of the mixture over the fish. (I’ve sometimes double the topping mixture to make sure I have enough to cover all the fish.)
4. Add a light layer of fresh bread crumbs over the fish. (Again, though not in Carol’s recipe, I think today I might replace the fresh bread crumbs with some Panko bread crumbs.)
5. Drizzle the butter over the top of fish.
6. Bake for 15-20 minutes in a 425 degree oven. Time will vary based on the thickness of the fish you are using. Serve fish with a wedge of lime.
