Corn Fritters
Nothing is like fresh New Hampshire corn in August! Try this recipe for Corn Fritters, another way to enjoy this annual treat.
Corn Fritters
3 large eggs, separated
1/2 cup cream or half-and-half
1 cup sifted all-purpose flour
1/2 teaspoon salt
4 cups fresh corn kernels (about 12 ears corn)
About 1 cup lard or vegetable oil
- Beat the egg yolks until foamy. Add cream, flour, and salt and combine well. Stir in corn.
- Beat egg whites to stiff peaks. Fold into corn mixture.
- Melt lard in frying pan over medium heat. (About 2” deep after it has melted.)
- Drop the fritter batter by the tablespoonful into hot lard. Flip them over so fritter is a golden brown on each side.
Serve hot. Great with a little maple syrup on top!
