Eggs and Onions with Rice

Eggs and Onions with Rice
Serves 4 to 5

3 medium onions, thinly sliced
3 tablespoons butter, melted
1 1/2 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
Pinch of both black pepper and cayenne pepper
3 hard boiled eggs, sliced
3 cups hot cooked rice

1. Saute onions in butter until light golden brown.
2. Stir in flour, cook 1 minute, then add milk.
3. Add seasonings, mix, then add eggs.
4. Heat until very hot and serve over hot rice.
