Indian Pudding with Lemon Sauce

Indian Pudding with Lemon Sauce
Serves 5 to 6

2 cups milk
1/4 cup cornmeal
4 tablespoons sugar
Pinch of salt
1 teaspoon butter
2 eggs, beaten
1 teaspoon fresh ginger, grated

1. Combine milk, cornmeal, half the sugar, salt and butter in top of a double boiler.
2. Cook, stirring constantly, until thick and smooth. Cover and cook 15 minutes longer.
3. Add well-beaten eggs and ginger, stirring constantly.
4. Pour into a buttered casserole that has been dusted with 1 tablespoon of sugar. Sprinkle the top with remaining tablespoon of sugar.
5. Place casserole in a large pan of water and bake in a 350 oven for about l hour. Serve warm with lemon sauce.

Lemon Sauce
1/2 cup sugar
1 tablespoon cornstarch
Pinch of salt
1 cup boiling water
2 tablespoons lemon juice
1 tablespoon butter

1. Gradually add water into sugar and cornstarch mixture. Add salt and cook love a low heat until clear and thickened, stirring constantly.
2. Mix in butter and lemon juice. Cool before serving.
