New England Corn Muffins
Makes 12 muffins or corn sticks
1 egg, well beaten
1 1/2 cups buttermilk
1/2 teaspoon baking soda
1/2 cup flour
1 1/2 cups corn meal
1 teaspoon sugar
3 teaspoons baking powder
1 teaspoon salt
1/4 cup melted butter
1. Heat oven to 450 degrees,
2. Grease muffin tins. (Calvin preferred the cast iron corn stick pan) and place in oven while you make the batter.
3. Combine all ingredients and mix until smooth.
4. Pour batter into hot pans, filling them almost full.
5. Bake for 10 to 15 minutes. Serve hot.
