Squash Puff

Squash Puff
2 cups dry cooked squash (roasted butternut squash is a good option)
8 tablespoons butter, melted
1 cup milk
Salt and pepper
8 beaten egg yolks
8 beaten egg whites

Cream Sauce
4 tablespoons flour
4 tablespoons butter
4 cups scalded cream or rich milk
Season with salt, pepper, celery salt and mace

1. Mix together all ingredients except the egg whites. 
2. Fold in the beaten egg whites and turn into a buttered mold.
3. Set mold in a pan of hot water and bake in oven at 350 degrees until the center is firm.
4. To make the sauce, melt butter, add flour and cook for one minute. Gradually add scalded milk, stirring constantly. Add seasonings and serve.
5. Turn squash from mold to serving dish and serve with a rich cream sauce.
